This recipe combines the crisp freshness of romaine lettuce, crunchy croutons, and savoury Greek Graviera cheese with the added protein and flavour of perfectly grilled chicken.
Adding grilled chicken to a Caesar Salad is a fantastic way to turn this classic dish into a satisfying and complete meal.

Ingredients needed to make this Grilled Chicken Caesar Salad:
For the Salad:
- Grilled, baked or rotisserie chicken fillet (I cooked it in the Air fryer)
- Romaine lettuce
- Spring onions
- Homemade croutons (again in the air fryer)
- 1/2 cup freshly grated Graviera cheese
For the Chicken marinade:
- Extra virgin olive oil
- Mild mustard
- Honey
- Salt, pepper and oregano
For the Caesar Dressing:
- Garlic
- Fish sauce or Worcestershire sauce
- Balsamic cream (I used a balsamic cream with pomegranate and vanilla. You can substitute with any other balsamic cream or with balsamic vinegar and honey)
- Mild mustard
- Anchovies fillet (or substitute with pitted Kalamata olives and capers)
- Extra virgin olive oil
- Mayonnaise
- Freshly squeezed lemon juice
- Dill
- Sea salt a
- Black pepper to taste
For the Homemade Croutons:
- Leftover bread
- Extra virgin olive oil
- Garlic powder
- Oregano
- Salt and black pepper to taste
Instructions:
- Prepare the Croutons: Toss the cubed bread with olive oil, garlic powder, oregano, salt, and pepper until well coated. Put the seasoned bread cubes in the air fryer and bake for 5 minutes at 180oC or until golden brown and crispy. Set aside to cool.
- Marinate and bake the chicken: Marinate the chicken for at least half an hour. Bake in the air fryer at 180oC for 20 minutes. Set aside to cool. Then cut it into ½ cm slices.
- Make the Caesar Dressing: In a food processor put all the ingredients and mix for a few seconds. Adjust the consistency with a little water if needed. Refrigerate the dressing until ready to use.
- Assemble the Salad: Place the chopped romaine lettuce in a large salad bowl and scatter the spring onion. Add the homemade croutons and freshly grated Graviera cheese.
- Dress the Salad: Drizzle the Caesar dressing over the salad. Start with a small amount and add more according to your taste preference. Toss the salad gently to ensure even coating of the dressing.
- Serve and Enjoy: Place the chicken slices on top and enjoy!
Tips:
- The Croutons can be prepared many days ahead and stored in an air tight container. (Follow the link if you want to make the Croutons in the oven).
- The chicken fillet can be baked from the previous day and stored in the refrigerator, wrapped in cling film. (Follow the link if you want to bake the chicken in the oven).
- The lettuce and spring onions can be washed from the previous day and placed in a colander to dry.
- Make the dressing ahead of time and store it in the refrigerator for up to a week.
- Feel free to substitute chicken with shrimp, and leave out the mayonnaise and cheese, to make the salad Lenten (for Orthodox Christians)..

- 1 chicken fillet, around 500 grams
- 1 head of romaine lettuce, washed, dried and chopped by hand
- 2 spring onions, white part only, washed and finely chopped
- 1 cup homemade croutons
- 1/2 cup Graviera cheese shavings
For the Chicken marinade:
- 1 tbsp extra virgin olive oil
- 1 tsp mild mustard
- 1 tsp honey
- Salt, pepper and oregano
For the Caesar Dressing:
- 1 small clove garlic, minced
- 1 tsp Fish sauce or Worcestershire sauce
- 1 tbsp balsamic cream, pomegranate and vanilla
- 1 tsp mild mustard
- 1 tsp Kalamata olives, pitted
- 1 tsp capers
- 1/4 cup extra virgin olive oil
- 1/4 cup mayonnaise
- 1/4 cup freshly squeezed lemon juice
- 1 tsp dill, finely chopped
- 1/4 tsp sea salt a
- Black pepper to taste
