Kreatosoupa is a Greek soup made with veal and lots of vegetables. I also call this soup clean up your fridge soup, as you can use any vegetables you like.
Kreatosoupa is made with Veal. Veal is often ignored but, it is a very tender and flavourful meat, so for the meat soup, I use 500 grams (1,10 lbs) veal from the chuck.
The meat is cut into small pieces and sauteed. The main vegetables used are onion, garlic, potatoes, carrots and celery. From there on, you can add any other vegetables you like.
If you are vegan, you can also make the same soup without the meat. It is called Hortosoupa. Also see the recipe for fish soup, which is called Psarosoupa.
Variations of Kreatosoupa (veal soup)
To make the soup more hearty and filling, you can add some carolina rice, some tiny star shaped pasta, called astraki or Cypriot Trahanas Soup.
Before adding any of these ingredients you can puree the vegetables in a food processor and then cook the rice, or trahanas for about 20 more minutes and the pasta for 10 minutes.

Ingredients
- 500 grams boneless veal from the chuck or shoulder
- 3 tbsp olive oil
- 1 onion, finely chopped
- 1 clove garlic, finely chopped
- 1 medium potato, diced
- 2 small zucchini (courgettes), diced
- 2 medium carrots, diced
- 2 tomatoes, peeled and diced
- 1 cup celery, finely chopped
- 6 button mushrooms, diced (optional)
- 6 cups of broth (or water)
- 1 tbsp salt
- Freshly ground black pepper
- 1 bay leaf
- 1/4 cup lemon juice
- 1 - 2 tbsp parsley, finely chopped (optional)
- Croutons (optional)
Instructions
- Wash the meat and cut it into small pieces and drain.
- In a saucepan heat the olive oil and sauté the meat on all sides Add the onion and sauté until translucent Add the garlic and sauté for a few seconds
- Then add all the vegetables and spices, broth or water and bring to a boil
- Lower heat and simmer for about one hour and thirty minutes, or until meat is tender.
- Discard the bay leaf.
- Serve with extra olive oil, lemon juice, parsley and croutons.
