This vegan chocolate cake uses avocado and extra virgin olive oil instead of any other fat, it is loaded with chocolate flavor and and many other healthy ingredients.
Normally, I’d use butter in my cake recipes. Replacing butter with avocado and olive oil turns this cake into a nutritional powerhouse.
Avocados are a great source of vitamins, fibre and loaded with heart-healthy monounsaturated fatty acids.
Greek Extra virgin olive oil is widely recognized as one of the world’s healthiest oils. It is packed with antioxidants and healthy fats which also makes the cake very healthy.
Can I taste the avocado in the cake?
No, you cannot taste the avocado at all but on the other hand it makes this cake deliciously moist yet surprisingly light.
OTHER HEALTHY INGREDIENTS
Orange juice: It’s naturally high in vital nutrients, such as vitamin C, folate and potassium.
Eggs: They are a very good source of high-quality protein, vitamin B2 and are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.
Dark chocolate: It is one of the best sources of antioxidants, soluble fiber, vitamins and is loaded with minerals.
Almonds: They contain lots of healthy fats, fiber, protein, magnesium and vitamin E.
HOW TO MAKE THE CHOCOLATE AVOCADO CAKE:
Prepare your baking tin: Line a 26 cm baking tin with parchment paper. Grease and flour the base and the sides.
Dry ingredients: Combine the flour, cocoa powder, baking powder and baking soda and pass them from a sieve. Mix in the salt and vanillins.
Melt the Chocolate: You can melt the chocolate in the microwave, a minute each time until it melts or over a double boiler.
Prepare the orange juice: Squeeze the oranges before your start the procedure.
Liquid Vanilla or vanillins: If using liquid vanilla, add it with the orange juice. If using vanillins, which is vanilla sugar, add it with the dry ingredients.
Avocado: Peel the avocado and remove the seed just when you are ready to use it, otherwise it will oxidize.
How to make the Vegan Chocolate Avocado Cake
Combine the flour, cocoa powder, baking powder and baking soda and pass them from a sieve. Mix in the salt and vanillins.
In the bowl of a stand mixer add the olive oil, sugar and avocado and whisk until the avocado melts and the mixture becomes smooth.
Add the orange juice. (If using vanilla essence, add it now).
Beat on high speed for 2 – 3 minutes.
Gradually add the melted chocolate.
Reduce the mixer speed and add the dry ingredients.
Stop the mixer and scrape the sides of the bowl.
Mix again until combined.
Empty the mixture in the prepared baking tin and sprinkle the pound almonds on top.
Bake for about 55 minutes or until a knife inserted in the middle comes out clean.
Vegan Chocolate Avocado Orange Juice Almond Cake

- 345 grams all-purpose flour
- 30 grams corn flour (starch)
- 30 grams cocoa powder
- 2 tsp baking powder
- 2 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla essence (or 2 vanillins)
- ¼ cup extra virgin olive oil
- 1 ripe avocado
- 330 grams sugar
- 2 cups fresh orange juice
- 200 grams vegan chocolate
- 70 grams almonds
Instructions
- Preheat the oven to 180o C.
