Pumpkin mash with potatoes mash is a side dish that combines cooked pumpkin and potatoes, which are mashed together to create a smooth and creamy mixture.

The mashed vegetables can be seasoned with butter, salt, pepper, and other herbs or spices to taste.

The dish is a simple, comforting, and versatile side dish that can be served with a variety of main dishes such as roasted meats, fish, and poultry.

It can also include other ingredients to add more flavor such as, cream, cheese, nutmeg and more.

I am adding butternut squash to my diet menu, as it is a flavorful addition to any healthy diet.

Properties of pumpkin

Pumpkins have several properties that make them a popular ingredient in many types of cuisine. Some of the main properties of pumpkins include:

The health benefits are many:  It has no fat or cholesterol, it is a good source of fiber, it is full of anti-oxidants, especially Vitamin A and beta-carotene. It also contains Vitamin C, which also helps the immune system.

Other things about pumpkins

Texture: Pumpkins have a dense, meaty texture that holds its shape well when cooked. This makes it perfect for using in dishes such as pumpkin puree, soups, and stews.

Taste: Pumpkins have a slightly sweet and nutty taste that pairs well with a variety of flavors, including sweet and savory.

Color: Pumpkins come in a variety of colors, including orange, yellow, and even green, and can add a nice visual contrast to dishes

Versatility: Pumpkins can be cooked in various ways, mashed, steamed, boiled, roasted and purred, making it perfect for a wide range of recipe.

Seasonality: Pumpkins are harvested in the fall and winter making it a staple ingredient during that time.

I made the pumpkin puree exactly the way I make mashed potatoes with the exception that I added halloumi and mixed in the pumpkin puree.  

It passed my mind to add some heavy or light cream but I preferred to keep it lower on calories.   I must say that I did not expect it to be so much better than plain mashed potatoes.

Serve as a side with roasted lamb or stewed beef, or pork skewers, with roast pork or lamb, grilled chicken, beef steaks, fish (crusted salmon) etc.

Ingredients to make Pumpkin Mash with Potato

Preparation time: 5 minutes

Cooking time: 30 minutes

Serves: 3

  • Roasted pumpkin or butternut squash
  • Potatoes
  • Butter
  • Halloumi
  • Salt
  • Freshly grated black pepper
  • A pinch of nutmeg
  • Milk

Let’s make the Pumpkin Mash

  1. Roast butternut squash.
  2. Peel the potatoes and cut them into wedges. 
  3. Put them in a pot and cover them with water. 
  4. Bring to boil, lower heat and simmer until soft.
  5. Drain potatoes. 
  6. Using a hand mixer or a potato masher puree the potatoes. 
  7. Add the butter and mix until the butter has melted. 
  8. Stir in pumpkin, halloumi,  nutmeg, salt and pepper and mix. 
  9. Add milk a little at a time and stir until it reaches the consistency you prefer.  It should neither be too runny or too thick

Pumpkin Potato Mash – Recipe adapted for Gallbladder Diet

For a pumpkin mash that is healthier and lower in calories, replace butter with extra virgin olive oil, use low fat milk and do not add the halloumi.

Preparation time: 5 minutes

Cooking time: 30 minutes

Serves: 3

Ingredients:

  • 1 cup butternut squash puree
  • 3 medium potatoes
  • 1 tbsp olive oil 
  • Salt
  • A pinch of nutmeg
  • 1/4 cup low fat milk

Directions, same as above.
