What is a Greek Pastelli?

Greek Pastelli, also known as pasteli, is a traditional Greek sweet treat made from just a few simple ingredients, primarily sesame seeds and honey or nuts and sugar.

This confection has been enjoyed in Greece for centuries and is still a popular snack today. Pastelli is sold at all Greek supermarkets but if you like you can make it easily yourself!

Note: If you don’t have any pastelli, you can leave it out and add more almonds or other nuts.

Ingredients needed to make this Apple Tart Crumble:

For the Filling:

  • Butter
  • Brown cane sugar
  • Honey
  • Granny Smith apples
  • Golden Delicious apples
  • Cornflour (starch)
  • Ground cinnamon
  • Applesauce (optional)

For the Base:

  • All-purpose flour
  • Sea salt
  • Powdered sugar
  • Butter
  • Egg yolks
  • Lemon flavoured vanilla sugar or a vanillin with lemon zest

Nut Crumble:

  • Butter
  • Powdered sugar
  • Blanched almonds
  • Mixed nuts pastelli
  • All-purpose flour

How to make the Apple Tart:

Prepare the Filling:

  1. Start by preparing the apples. Peel, core, and cut them into bite-sized cubes. Place the apple cubes in a bowl with water and lemon juice, to prevent them from browning.
  2. In a large non-stick frying pan, melt the butter over medium heat. Once it’s melted, add the brown cane sugar. Stir until the sugar begins to dissolve and create a caramelized effect.
  3. Pour in the honey, stirring it into the sugar and butter mixture until it caramelizes further.
  4. Meanwhile, drain the apples, Now, add the prepared apple cubes to the pan. Stir them into the caramelized mixture to coat them evenly.
  5. Sprinkle in the cinnamon, ensuring it’s well-distributed. Cook the apples for about 6-7 minutes, being careful not to overcook. We want them to soften while retaining their shape and juices.
  6. As the apples release their natural juices, add the cornflour and continue to stir for approximately 1 more minute. This will help thicken the juices and create a luscious filling.
  7. Remove the pan from the heat and allow the apple filling to cool. If desired, you can prepare this filling in advance, storing it in a container with a lid in the refrigerator.

Prepare the Base:

  1. Begin by making the buttery tart base. In a food processor, combine about 3 tablespoons of flour with a piece of cold butter (roughly 50 grams). Pulse until the mixture resembles fine crumbs. Transfer this mixture to a mixing bowl.
  2. Repeat the process with the remaining flour and cold butter until all the ingredients are incorporated.
  3. Add the salt, vanilla sugar (lemon-flavoured or plain vanillin), and egg yolks to the crumbly mixture. Then, knead the ingredients together until they form a cohesive dough.
  4. Put the dough in a 28 cm diameter tart pan. Use your hands to press and spread the dough evenly, ensuring it reaches the same thickness throughout. Cover the tart base with cling film and refrigerate it until you’re ready to use it.

Note: if you don’t have a food processor, cut the butter into small cubes, put it in a bowl with all the flour and the other ingredients and mix wwith you hands, until you have a cohesive dough.

Prepare the Nut (Pastelli and Almond) Crumble:

  1. To make the delightful nut crumble, you can use store bought blanched almonds or start by blanching the almonds. Once blanched, let them drain on a paper towel.
  2. In the same food processor used earlier (without washing it), combine the blanched almonds, pastelli, and powdered sugar. Blend until the mixture reaches a slightly coarser consistency than fine powder. Transfer this mixture to a separate bowl.
  3. Next, combine all-purpose flour and butter in the same food processor. Pulse until they form coarse crumbs. Add this mixture to the bowl with the almond and pastelli mixture.
  4. Mix the ingredients until the flour mixture is evenly distributed among the the nuts mixture. Transfer the nut crumble to a container with a lid and refrigerate it until it’s time to use.

Assembling the Apple Tart:

  1. Preheat your oven to 170°C with the fan function enabled.
  2. Remove the cling film from the tart base.
  3. Pour the prepared apple filling evenly over the tart shell, ensuring it covers the entire surface. If you have apple sauce, drizzle it over the filling and spread it evenly as well.
  4. Take a handful of the nut crumble mixture and gently crumble it over the top of the apple tart, ensuring it’s evenly distributed.
  5. Bake the assembled tart in the preheated oven for approximately 40-45 minutes or until the top is beautifully browned.
  6. Once done, you can serve the tart either warm or cold.
  7. If there are leftovers, store them in the refrigerator, ensuring they’re consumed within a day.

Note: You can prepare all three components of the Apple Tart from the previous day, store them in the refrigerator and assemble and bake whenever you want to serve it.

  • 25 grams corn flour (starch)
  • 1 tbsp cinnamon (or more if you prefer)
  • 3 tbsp applesauce (optional)

For the base:

  • 350 grams all-purpose flour
  • ½ tsp salt
  • 150 grams powdered sugar
  • 150 grams cold butter, cut into small pieces
  • 4 egg yolks
  • 1 vanilla sugar, lemon flavored or plain vanillin with 1 tbsp. lemon zest

For the Nut Crumble:

  • 100 grams butter
  • 60 grams powdered sugar
  • 60 grams almonds, blanched
  • 80 grams mixed nuts pastelli
  • 100 grams all purpose flour
