If you love the combination of caramel and peanuts, this creamy and delicious Frosting with Dulce de Leche and Peanut Butter is perfect for your next cake.
It is thick and spreadable, without being overly sweet as the heavy cream balances the sweetness of the dulce de leche and the peanut butter adds a light nutty flavour to the cream.
This cream works beautifully as a filling and frosting for a 20 cm cake.
If you have a nut allergy, you can simply omit the peanut butter. Even without it, the texture of the cream becomes lighter, almost like a mousse, which makes it ideal for filling cakes.

Tips and Notes
Cold cream is essential for a smooth texture.
Adding dulce de leche gradually prevents the cream from splitting. The amount I have used, makes it lightly sweet. If you want it sweeter, add more Dulce de Leche.
This frosting is thick but not stiff, so it spreads nicely and holds its shape moderately well.
For extra stability, a small amount of dissolved gelatin can be added if desired.
It pairs beautifully with chocolate or nutty cakes.
Store in the fridge and serve chilled.

This is the Birthday Cake I made for my daughter, Elia!
I made the sponge cake smaller than I usually do and baked it in a 20 cm diameter pan for 35 minutes: I used 4 eggs, 135 g sugar, 85 g cake flour, 1 vanilla, and orange zest.
I cut the sponge cake in half, moistened it with syrup from cherry preserves, and added 1/3 of the cream, after mixing in two more tablespoons of peanut butter and scattered 10 cherries from the cherry spoon sweet
On top, I heated the remaining dulce de leche in the microwave, spread it out, and decorated it with cherries.
P.S. The platter and the bowl are both Elia’s creations! She has been going to a ceramics class for a while and she has made many more beautiful creations!
