  • Lemon juice and zest

  • Salt, pepper, paprika, and dried oregano, to taste

!For the potatoes:

  • Potatoes
  • Extra virgin olive oil
  • Lemon juice
  • Orange juice
  • Water

Ingredients

For the chicken:

  • 300 grams chicken thighs (about 3 pieces)

For the marinade:

  • 1 tbsp mild mustard
  • 1 tbsp extra virgin olive oil
  • Juice of 1 orange
  • Juice and zest of 1 lemon
  • 1 tsp honey
  • 1 tbsp soy sauce
  • 1 clove garlic, finely chopped
  • Salt, pepper, paprika, and dried oregano, to taste

For the potatoes:

  • 3 medium potatoes, peeled and cut into wedges
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • Juice of 1 orange
  • 1 cup water

Instructions

  1. Marinate the Chicken: In a bowl, whisk together the mustard, olive oil, orange juice, lemon juice and zest, honey, soy sauce, and chopped garlic. Season with salt, pepper, paprika and oregano. Add the chicken thighs, turning to coat well. Cover and marinate in the fridge for at least 1 hour (or overnight for best flavour).
  2. Turn them over and add the marinated chicken thighs and any leftover marinade.  Cook for 25 more minutes.
  3. Prepare the Potatoes: Preheat the oven to 200°C (fan 180°C). Spread the potato wedges in a baking dish. Drizzle with olive oil, lemon and orange juice, and a splash of water. Season with salt and oregano. Bake for 50 minutes, turning once halfway through for even browning.
  4. Add the Chicken: Remove the potatoes from the oven. Place the marinated chicken thighs on top of the potatoes. Pour over any remaining marinade.
  5. Finish Roasting: Return the dish to the oven and roast for an additional 25 minutes, or until the chicken is golden and cooked through.

Serving Suggestions

Serve hot with a fresh salad or steamed vegetables, and crusty bread to soak up the delicious juices.
