Spaghetti with Chicken and Pesto
This pasta dish is very versatile so you can easily improvise with the ingredients you have at hand. You can use mushrooms, broccoli, artichokes, courgettes, eggplants etc. During fasting time (or for vegans) of course I don't add the chicken and I don't use cheese in the pesto and it is fantastic.
Serve with feta!

Hey sis. This is the simple and flavourful dishes that I am talking about that just make life go round. When in Epirus and Thessaly I visited many small mountain villages that most tourists may never see. It is worthwhile to sit down in a small establishment, where even our guide does not totally understand the language because the people are speaking Vlach, and have a tyropita and a Mythos after a long hike up the Scala along a 15th century donkey trek.
I love any recipe with chicken and being so versatile you give me so many ideas of what to make.

Yes, Ivy, this is very delicious food, and I really love it. Although I don't put pesto in it! I do put cheese though. I love that there are so many variations in classic recipes.
This sounds delicious Ivy. It looks a lot like the pasta dish I am about to post about, but they are obviosuly quite different as I am using a different pesto and cheese.
