Loukoumades or Lokmades – Greek and Cypriot Doughnuts

Loukoumades or Lokmades, as they are called in Cyprus, are Greek doughnuts. They take their name from the Arabic words “luqma(t) plural luqūm”, lokma and lokum or loukoumi, meaning morsel or mouthful. They are fried, shaped into small round ballls, served with honey, cinnamon and walnuts or plain in Cyprus dipped in sugar syrup.

Melitzanosalata (Traditional Vegan and Gluten free Eggplant Dip)

Melitzanosalata is a traditional Greek vegan dip / appetizer made with eggplants which have been charred over charcoal or over an open flame, until the skin blisters, to get a smoky taste.   The skin is then removed, as well as the seeds, if any, and the eggplant is either finely chopped, mashed with a fork or pureed.
