The pound cake is a rich, buttery cake with a dense yet tender crumb. Traditionally, it is made with equal parts butter, sugar, eggs, and flour.

My Grand Marnier and White Chocolate Vassilopita is based on a pound cake but in order to make it a “Vassilopita”, I added fresh orange juice, orange zest and instead of the traditional brandy, I added Grand Marnier.
A moist, buttery and subtly flavoured lemon sponge, with pastry cream between the layers and topped with salted caramel and whipped cream.
