Orange flavoured Pecan and Almond Cookies

I wanted to make something sweet but as this was not planned I opened my kitchen closets and looked for ingredients to see what I could make.  I did not have eggs, I did not have enough regular sugar, I did not have vanilla, I looked into the drawers where my spices are looking for mastic resin, I did not have anything to use as a flavour to make anything but I had an orange.  I had some almonds, pecans, self rising flour, margarine  and icing sugar so I would try and make some cookies.

The margarine I had was 120 grams and I had no idea how many cookies that would make.  I added I cup of icing sugar and 1 cup of flour but after adding all the other ingredients the dough was I little bit sticky, so I adjusted it by adding 2 – 3 more tablespoons of flour.

The cookies were so easy to make and I wish I had some butter they would be perfect but even with margarine they still tasted great.  The kids liked them, although for my taste I would prefer them with less sugar inside and the icing sugar on top was not necessary.

Orange flavoured Pecan and Almond Cookies – Recipe by Ivy

Preparation time: 30 minutes

Baking time: 12 minutes

Yields: 50 cookies

Ingredients:

120

Grams

Butter or margarine, at room temperature

1

Cup

Icing Sugar

1

Tbsp

Orange rind

75

grams

Pecans, coarsely ground

75

grams

Almonds, coarsely ground

1

cup

Self rising flour + a few tablespoons

¼

Tsp

Salt

Whole pecans for decoration

Icing sugar for dusting on top

Directions

1.

Beat butter with sugar in the mixer until light and creamy.

2.

Add orange rind, salt, almonds, pecans and flour.

3.

Mix into a dough.

4.

Place in between cling film and flatten with a rolling pin to about ½ cm thick. Cut with a cookie cutter.

5.

Collect all pieces of the dough remaining and roll out again until all the dough has finished.

6.

Add a pecan on each cookie.

7.

Preheat oven at 180 C. (350 F.). Line a cookie tin with parchment paper and place each cookie leaving a gap of about 2 – 3 cm from each other.

8.

Bake for 10-12 minutes. When cool, dust with icing sugar.

These cookies look deliicous, Ivy. We don't get pecans here and my sister brought me some from the U.S. Now I can't decide what I should use them in. :)
