Presto Pasta Nights No. 96 Roundup

Sharing is caring!

I have been following Ruth’s Presto Pasta Nights since I started blogging, more than a year ago and it was and is one of my favourite Food Events. Pasta is so versatile that all you need is little imagination and little time to create a delicious meal.  It is amazing how pasta transforms around the world, each country using its own spices and ingredients, making pasta dishes unique and local.

Presto Pasta Nights is a very popular event and I did expect a lot of entries but I was very surprisingly happy to get so many entries, not only from my friends but also from other bloggers whom I am looking forward to becoming  friends with, as well.

There were many lovely dishes and to my surpise nearly all dishes were cooked in a very healthy way, incorporating dried legumes and vegetables in them.  The dish that featured the most this week was pasta dishes with aglio e olio (garlic and olive oil) but there were also a lot of other very original creations, which you will enjoy, when you visit your fellow bloggers during the weekend and see what they have created.

Honouring the brainchild of Presto Pasta Nights, Ruth, of Once Upon a Feast, I am starting with her recipe and the others are with the sequence they came in, except mine which are the last two.

Ruth, is still dieting and is offering us a suggestion of a Sicilian-Style Broccoli Rabe, with whole wheat pasta.

Ruth, I wonder how you can stick to your diet with all these delicious pasta dishes you read every week?

Joanne, of Eats Well with Others, has made a Babaganoush-Hummous Pasta with Penne. Joanne is a new blogger who loves to organize her meals in advance as she lives in cold Boston and does not want to go out shopping everyday and she decided to combine to of her favourite food eggplant and hummus with pasta making this lovely dish.

L.K., of Food 4 Tots, has made a Rainbow Seafood Pasta Salad. She has used lovely, colourful ingredients, pasta shells and prawns and combined them with her homemade Thousand Islands Salad Dressing.

Nancy, of The Dogs Eat the Crumbs has made Pasta All’ Aglio e Olio, inspired by Mark Bitterman’s Linguine with Garlic and Oil.

Marie, of Starchy, has prepared a Vietnamese Shrimp Noodle Salada, adapting It from a Nigella Lawson’s recipe.

Kitchenetta, of Got no Milk, has made a lactose free Taos Chick Pasta.

Finally, the host, Ivy, of Kopiaste… to Greek Hospitality (that’s me 😉  I have made two pasta dishes.  The first one being a virtual tourist, I have made a Polish pasta dish called Kluzki z Kapuska (Pasta with Cabbage), and

the second one Kokkinisto, which is a Greek traditional beef/veal stew. I combined it with tomato based rose petal shaped pasta.

Thanks everyone for participating and thanks to Ruth for allowing me to host this week!

Don’t forget to submit your pasta dishes to the next host of Presto Pasta Nights, who is Haalo, of Cook Almost Anything.
