Easy to make Chef’s Salad and Thousand Island Dressing

Chef’s salad is very popular in Greece and you will find it served in most restaurants.  This recipe is my twist to the classic recipe made with a homemade sauce.   This is a beloved salad, easy to make but so tasty which will be a hit to your guests.

The classic recipe is an American salad with hard boiled eggs, one or more varieties of meat, such as ham, turkey, chicken, or roast beef, tomatoes, cucumbers and cheese, placed on a bed of lettuce or other greens.

A variety of dressings may be added to this salad but the most popular one is the Thousand Islands Dressing.  You can buy it ready made in all supermarkets but you can make it yourselves easily with pure ingredients and most of all with no preservatives.

This is a fabulous salad that’s truly an entire meal.  During our hot summer nights here in Greece when sometimes I am not in the mood of preparing a meal, this combination of greens and proteins is perfect.

The combinations you can make are innumerable, keep the lettuce, ham, cheese and boiled eggs which are the base for this salad and add other ingredients you like  There are selections of greens and vegetables you can use, instead of ham, use crispy bacon, or other kinds of cheese.

Easy to make Chef’s Salad and Thousand Island Dressing

Servings:  6

Preparation time: 15 minutes

Ingredients:

  • 1 lettuce or other greens washed and torn into bite sized pieces
  • 6 cherry tomatoes halved or 1 tomato peeled and cut into slices
  • 1 cup wild rocket
  • 1 small cucumnber, sliced
  • 1 spring onion, finely chopped
  • 2 hard boiled eggs cut
  • 3 spring onions finely chopped
  • 1 carrot, shredded
  • ½ cup of smoked ham, cut into small pieces
  • ½ cup of graviera cheese, cut into small cubes
  • ½ cup of Milner, gouda, cheddar or edam cheese, cut into small cubes
  • 1 tbsp Extra Virgin olive oil
  • Salt
  • Pepper
  • Croutons (see recipe here)

Homemade Thousand Island Dressing

  • 1 cup homemade olive oil mayonnaise
  • 1 juicy lemon
  • 1 tsp Worcestershire Sauce
  • 1 tbsp muscovado sugar
  • 3 tbsp cider vinegar
  • 1/4 cup ketchup
  • 1/3 cup Sweet Red Onion
  • ½ cup red sweet bell peppers (or Greek Florinis Peppers)
  • 1 tsp gherkins

Directions:

  1. Wash the lettuce and drain.  Use the most tender leavesr.
  2. Cut the lettuce by hand into bite size pieces.
  3. Add tomatoes, cucumber, cheese, ham, boiled eggs and all the other vegetables.
  4. Add salt and pepper as well as some of the sauce.
  5. Cover with plastic membrane and refrigerate for half an hour before serving, so that all flavors will blend together.
  6. Add the croutons and  mix.
  7. To make your own dressing, just put all the ingredients (except the mayonnaise)  in a food processor and purée.
  8. Mix all ingredients until creamy and then mix with the mayonnaise.
  9. Refrigerate until chilled.

Looks absolutely delicious. I am not a big fan of raw onions but in an "egg salad" I am sure I wouldn't mind it too much. Awesome pictures!

It's true, you can find this salad everywhere here in Greece. It is easy to make and a very popular choice to include in a menu...

I think this salad is a good meal if someone wants to have a light meal.

Ivy, this salad has foreign origins yet the Greeks have made it their own, appearing on menus everywhere as "salata tou sef" and it's become a Greek salad.

It's a little heavy for summer but good for these colder months.
